- 2 very ripe plantains (the peel should be mostly black)
- 2–3 tablespoons of vegetable oil or butter

- Peel the ripe plantains and slice them diagonally into ½-inch pieces.
- Heat the oil or butter in a skillet over medium heat.
- Add the plantains and cook for about 2–3 minutes per side, or until they're golden brown and caramelized.
- Serve warm on their own or with crumbled queso fresco, mozzarella, or your favorite Colombian cheese.
