Ingredients

  • 5 ears of corn
  • ½ cup mayonnaise
  • ½ cup crumbled Cotija cheese
  • 1 lime
  • 2 tablespoons chili powder or Tajín
  • Optional: Wooden sticks or skewers for serving

Preparation

Cook the Corn

  1. Boil the husked corn in a large pot for 8–10 minutes, or until tender. Remove and let cool for about 10 minutes.

Assemble the Elote

  1. Insert wooden sticks or skewers into the base of each ear (optional for easier handling).
  2. Generously brush each corn cob with mayonnaise.
  3. Sprinkle crumbled Cotija cheese over the entire corn.
  4. Lightly dust with chili powder or Tajín to taste.
  5. Finish with a squeeze of fresh lime juice.
