Ingredients
- 5 ears of corn
- ½ cup mayonnaise
- ½ cup crumbled Cotija cheese
- 1 lime
- 2 tablespoons chili powder or Tajín
- Optional: Wooden sticks or skewers for serving
Preparation
Cook the Corn
- Boil the husked corn in a large pot for 8–10 minutes, or until tender. Remove and let cool for about 10 minutes.
Assemble the Elote
- Insert wooden sticks or skewers into the base of each ear (optional for easier handling).
- Generously brush each corn cob with mayonnaise.
- Sprinkle crumbled Cotija cheese over the entire corn.
- Lightly dust with chili powder or Tajín to taste.
- Finish with a squeeze of fresh lime juice.
